Rogan Josh Vegetable Curry

Latasha’s Kitchen Rogan Josh Masala Paste is fantastic with diced eggplant, potatoes, sweet potatoes or pumpkin. Or even a mix of each vegetable. Diced small or chunky it is a dish that’s great for a shared table. Also works well with other mixed diced vegetables such as cauliflower, carrots, peas, green beans or sweet corn.


  1. In a deep pot, heat 3 tablespoons of oil, add ½ jar Latasha’s Kitchen Rogan Josh Masala Paste, ½ cup water and fry for 5 minutes.
  2. Add 1kg vegetables of your choice and mix well with the paste for 10 minutes. Add salt, a tin of chopped tomatoes or cherry tomatotoes  and a cup of water to cover the vegetables. Bring to a quick boil before simmering with a lid for 1 hour. Remove the lid and cook on high to reduce or thicken the sauce.
  3. Cool then stir in 200 ml whipped yoghurt or ½ cup thickened cream and juice of a lemon. Alternatively use buttermilk, coconut milk or cream.
  4. Garnish with plenty of coriander leaves, green chillies and lemon juice.

TIP: Add more water if the vegetables are cut in chunkier pieces.
