Scrumptious Legume Hurry Curry

Ingredients (serves 4+)

  • 2 teaspoons oil
  • 1½ teaspoons Latasha’s Kitchen Homestyle Curry Paste
  • 2 onions, chopped
  • 2 tins of legumes (I used chick peas and brown lentils), drained and rinsed
  • 1½ tins of tomatoes or equivalent
  • 1 cup water
  • For serving – cooked rice OR some pita bread and anything you can add such as Kachumber (tom/cuc/onion/lemon) or my garlic spinach (made with frozen spinach) – see side dish section

Method

  1. Heat oil and Latasha’s Kitchen Homestyle Curry Paste and cook for 1 minute till aromatic
  2. Add the chopped onion and cook on a medium heat for 1 more minute
  3. Add the legumes, tomatoes and water
  4. Cook for 10-15 minutes on a low heat, stirring occasionally

Portion plating

  • ¼ plate protein-rich food – provided by the chickpeas and the lentils
  • ¼ plate low GI carbohydrate – ⅔ cup of cooked rice
  • ½ plate vegetables – provided by the vegetable-rich curry and the salad/side dishes
