Scrumptious Legume Hurry Curry
Ingredients (serves 4+)
- 2 teaspoons oil
- 1½ teaspoons Latasha’s Kitchen Homestyle Curry Paste
- 2 onions, chopped
- 2 tins of legumes (I used chick peas and brown lentils), drained and rinsed
- 1½ tins of tomatoes or equivalent
- 1 cup water
- For serving – cooked rice OR some pita bread and anything you can add such as Kachumber (tom/cuc/onion/lemon) or my garlic spinach (made with frozen spinach) – see side dish section
Method
- Heat oil and Latasha’s Kitchen Homestyle Curry Paste and cook for 1 minute till aromatic
- Add the chopped onion and cook on a medium heat for 1 more minute
- Add the legumes, tomatoes and water
- Cook for 10-15 minutes on a low heat, stirring occasionally
Portion plating
- ¼ plate protein-rich food – provided by the chickpeas and the lentils
- ¼ plate low GI carbohydrate – ⅔ cup of cooked rice
- ½ plate vegetables – provided by the vegetable-rich curry and the salad/side dishes
