Malaysian Satay Sauce

Use this delicious sauce for creative satay inspired meals.


Method:

  1. In a deep saucepan, heat 3 tablespoons of peanut oil or Latasha’s Kitchen Chilli Oil, 1 jar Latasha’s Kitchen Malaysian Satay Paste, 1-2 long red chillies (thinly sliced) or a few whole bird’s eyes chillies, 300ml water, 4 tablespoons of grated palm sugar and simmer for 10 minutes.
  2. Next add 800 ml coconut milk or cream, salt to taste and bring to a quick boil. Then gently simmer for 10 minutes until sauce gets thick and reduced and oil starts to float on top.  Add 400g crushed roasted peanuts or your favourite crunchy peanut paste (we recommend Pics or Mayers brands) to Latasha’s Kitchen Malaysian Satay Paste to make a creamier, sweeter sauce. Alternatively, make your own peanut paste by roasting peanuts and semi crushing it in a blender. You can bottle this versatile sauce and use it for a number of creative satay inspired meals.
  3. If sauce is too thick add more boiled water to get a thick running consistency.
  4. Makes approximately between 1.3-1.5 litres.
  5. Cooking the sauce for longer will yield an even thicker, richer and spicier sauce. To thin this thick paste simply add some hot boiling water.

 


Options

  • if you want to make just a small batch of satay sauce, then in a deep saucepan, heat 1 tablespoon of peanut oil or Latasha’s Kitchen Chilli Oil, 2 tbsp Latasha’s Kitchen Malaysian Satay Paste, 1 small red chilli (split in half)  200ml water, 1 tablespoon grated palm sugar and simmer for 5 minutes. Then add 200ml Ayam brand coconut cream or milk according to preference, and 3 tbsp Pic’s crunchy Peanut Butter. Add salt to taste. Sauce should be thick, creamy and slightly runny. Otherwise add more boiled water.
  • Use some of this sauce as a dip for grilled satay chicken, lamb, beef, vegetable medley or tofu skewers.
  • Works well as dips for veggie sticks or bread sticks or as a marinade for larger cuts of meats and chunky veggies.
  • Makes an awesome dressing when used in a mean satay burger, satay wrap, kebabs or satay chicken and egg salad.
  • Great too for entertaining. Simply toss the sauce together with cooked grilled crabs, prawns and squids and make up a spectacular seafood platter.
  • Makes a fantastic sauce for vegetarian, seafood or meat pizzas with pineapple and red onion topping – what a treat!
  • Alternatively pour this tasty sauce over baked chicken, meats, seafood or mixed vegetable platters.
